The Preview application works well to combine and arrange pdf's. I have not given any thought to protecting the pdfs.

Sounds like network issues.
Try going to Control Panels/Sharing, turn on File Sharing.

It looks like Acrobat Pro v.8 will not work to print pdf's in Snow Leopard, and looking at the Adobe forums it seems like upgrading to v.9 there are still some issues.
